Time For… Spring Rolls!

Hello there! I’m thrilled to finally be back with what has been one of my favorite recipes for the past few months… Oh and – Happy New Year! (lol), I’ve been severely ghosting my blog for way too long, but I am (hopefully) back for good! I have many posts in my drafts that I can’t wait to share with you, but in short, life has been good! I hope you’ve been doing well too and I’m really looking forward to reading all my favorite blogs again.

In the meantine, I’m back with a mouth watering recipe I am sure you will adore… SPRING ROLLS. Perfect for the warmer months if you’re craving something fresh, filing and extremely tasty.

Ingredients (for 5-6 spring rolls)

Spring rolls

  • Rice paper
  • A (small) bowl of vermicelli rice noodles

The good news is that you can put pretty much anything you want inside, so don’t be afraid to try out different fillings. For all my spring rolls, my base is:

  • Half a cucumber
  • 2 carrots
  • 1 avocado
  • 1 mango (optional but absolutely delicious)
  • Fried onions
  • Coriander

Peanut butter dip

  • 3 tbsp peanut butter
  • 1 tbsp pure maple syrup (or honey)
  • 1 tbsp sweet soy sauce
  • 1 tbsp white rice vinegar
  • 1 tbsp of sesame oil
  • 1 tbsp of water (depending on the thickness of your peanut butter – pour your water slowly)

Steps

Spring rolls

  • Chop all your fruits and veggies (I like to use a mandoline for the carrots and the mango, for the other ingredients, you can simply julienne them).

  • In the meantime, pour your noodles in warm water for about 3 minutes, then put them in cold water for a minute. Drain the noodles and keep them in a bowl.

So, all your ingredients are now lying on the kitchen counter. Next:

  • Use a tart pan (or anything else that you have handy) and pour about 1 or 2 cm of warm water in it (the warmer the water, the quicker your rice paper will soften – do not use boiling water because it increases the risk of breakage – these little things can become extremely fragile).

C’est parti!

  • Pour the rice paper into the water for a few seconds, lay it on the counter, add your fillings – make sure not to overload or it will break. Instead, on one extremity, add a small layer of noodles and add one or two pieces of each ingredient on top of the noodles.

  • Roll your spring rolls and make sure to make them thigh enough.

  • You can then place them on a microfiber towel in order to absord the excess water – if any.

  • Place the spring rolls on a plate previously oiled with sesame oil. I like to pour a little bit of sesame oil on top of the spring rolls, just to add extra flavor.

… Reapet… Now, the best part…

Peanut butter dip

  • Add all the ingredients and mix together. Feel free to adjust the measuring based on your taste! I sometimes add extra white rice vinegar or sesame oil depending on my mood (or my cravings…).

    I love spring rolls. I always put shrimp in mine, after seeing yours I may need to spread my wings!
