Level Up Your Meals : Pickled Red Onions

Hi there, I hope life is treating you well lately.

I’m back with a food post, nothing too long, you know me!

Today, I’m sharing my obsession from the past few months: Pickled onions!

They’re perfect for burgers, spring rolls, sandwiches, noodles, rice, or pretty much anything. This little side dish will add a tangy, fresh note to your meals, and the best part? It takes just 5 minutes to prepare.

All you need is a clean glass jar (I reuse old jars, but any will do) and enough sliced red onions to fill it up.

On the stove, heat a mix of equal parts water and white vinegar, with a small tablespoon of salt, until it boils.

Pour the hot mixture over the onions in the jar, let it cool at room temperature, then pop it in the fridge, et voilà!

I recommend waiting at least a couple of hours before eating them. While you can keep them for up to two weeks, they never last that long for us—we eat them right away!

I hope this inspires you to give it a try. Trust me, you won’t regret it! And don’t limit yourself to onions, you can pickle almost anything. I’m thinking of trying red cabbage next.

    I just pickled onions and peppers. I keep adding vegetables as I remove some of what is already pickled.
